When you calculate the volume of oil to put into the fryer, taking of course into account the volume of the turkey, don't forget to adjust for the thermal expansion coefficient of the oil.

If you're one of those who prefers to just "eyeball it", then be prepared for one of two things.....either a half raw Turkey, or a pretty column of blazing inferno.

If you find yourself with a column of blazing inferno, don't be an idiot and use water. Be a real Floridian and use gasoline.

Definitely don't be a pussy and buy a stable base, and don't use a propane fuel with a control valve and safety kill switch. That's boring. You can do just fine with a three pronged rickety metal stool and a wood camp fire or charcoals. Or gasoline if you're in a hurry.

If you're feeling nervous, just invite a buddy who volunteers at the fire department. That's what you pay taxes for.

And don't just drop it into the frothing 700 degree oil like those idiots in that video. Where's the fun in that. Make a game out of it and see if you can toss it in there from a distance. Real Floridians can land a turkey into a deep fryer from 10 feet away, no rim.

Even I, when faced with gallons of boiling oil looked for some child to take over and face the risk of lifelong agony. No child being present and hungry guests getting restive, I persevered!!

Well, this is what is called a post mortem.

What does one do with 6 gallons of fowl infused oil? How does one clean a 42 quart, Beetle Baily KP sized, pot? How does one even move mass quantities of oil from one receptacle to another?

And why is it that no woman I have met has ever extolled the virtues of deep frying a turkey whereas their menfolk wax ecstatic over the prospect.

To take the last first. Women have far more common sense then men. Women to not blow themselves up with black powder (I did, in front of the kids. They were horrified). Women understand that after the meal, there is a tab to be paid. The cleanup tab. Women can weigh risk reward in some areas far far better than men. I will come back to the second part of that question anon.

The simple truth is that handling a large quantity of oil is similar to handling a large quantity of mercury. It sloshes and the weight shifts and it shifts implacably. Now, not only do you have to transfer it somewhere, if you have hopes of reusing it you need to filter it. To make a long story short, funnels can slip when large quantities of mercury-like liquids are poured into them. Then that happens, a 1 quart capacity funnel will deposit 1 quart of liquid everywhere. It is a rule, btw, that funnels only slip when they are completely full.

A note on re-use. Have you ever looked at the "Best when used by" date on a gallon of peanut oil? I did. It is two years out. Think about that.

My friends tell me to "use it next time". HA! A year out? And the stuff reeks of Turkey? Seriously?

Sorry charlie. Ain't happening. The result was/is not worth the pain in the ass of cleanup nor is it worth the cost.

Now, why the disconnect by gender as to the worth of the deep frying exercise.

The only way derp fried turkey works is if you do like 5 of them, with a big crowd of people, then throw the used oil on the bonfire through out the night (a little at a time)

Then the next year you say fuck it and do it all over again
